Sourcing locally and organically is not only about the important of health consciousness—it’s also about community, the importance of small businesses, and the people who run them. Most importantly It’s also about the connections you make, relationships you build, the trust you create, and the knowledge you share not only from farmers but also the people/community that support you and that you meet along the way. You are learning, exchanging, and growing together

A farm committed to bringing you organic, high-quality produce. They grow tomatoes, potatoes, fresh peppers, grass-fed meat, beans, and onions. We use their onions, tomatoes and peppers (when in season) in our chicken tinga and our signature pozole verde, and we also use their black beans.

Wild Spaces Farm

A pastured-raised dairy farm dedicated to the love of cows. They truly care for their animals: cows are milked only in season, never forced or overworked, so you could say they are very happy. Using their exceptional raw milk and yogurt, we create our brioche bread known as Conchitas — a Mexican sweet, soft brioche topped with butter and shaped like a seashell that just melts in your mouth. And the yogurt for a Zesty coleslaw for out Idaho Sturgeon tacos.

Evens Farmstead Cheese

Cheese! Who doesn’t like cheese? Evans Farmstead Cheese offers a range of distinctive, delicious cheeses—from traditional varieties to fermented styles—along with raw milk and raw yogurt. We used their queso fresco to make zucchini blossom quesadillas and their raw milk in our Mexican baked goods.

The Good Food Farmacy

A local gut-healing food business focuses on nourishing, healthy foods, including fermented products, cultured dairy, bone broths and meat stocks, soups, and much more. They use local, organic, clean ingredients sourced from nearby farmers. They have been an inspiration to us; we have learned many of their techniques and incorporated them into our dishes to make our food as healthy and nourishing as possible for you. We use their homemade crème fraîche as a garnish in our dishes.

Firehouse Macha

Talk about some chiles!

Firehouse Macha dedicated to Macha salsa only. They have been our go-to macha salsa since last year. When I discovered it, I realized it pairs excellently with almost all of my dishes. We use Pistacho Verde. Firehouse Macha uses clean, organic ingredients sourced from local farmers. It’s a salsa I highly recommend trying and buying — they offer a very good selection of flavors.

Oaxacanita Chocolate

A chocolate-producing business that works very closely with local farmers in Oaxaca, Mexico. They are known to craft their chocolate tablets from scratch and shape them by hand using ancient knowledge and techniques passed down through generations. They also have a community program where they teach children the history of cultivating cacao seeds and trees, passing that knowledge to new generations.

For our specialty ingredients, we make sure they are carefully selected from their original origins in this casa in Oaxaca, Mexico. We use their chocolate tablets in our Dark Oaxacan Mole and in our Mexican Oaxacan Hot Chocolate.

Corn is the main ingredient in many Mexican dishes. As with all the ingredients we use, we care deeply about where it comes from — and corn is no exception. The quality of the corn matters because it completes our food.

I want to share where we source our corn: Brenda’s and Grano de Oro are two small vendors I visit when I travel to San Diego, CA (located just across the border in Tijuana, Mexico). They supply quality corn that originates from Oaxaca or the central region of Mexico. When I don’t have time to travel, I order from Masienda. They work closely with Oaxacan agriculturists who grow specific, high-quality varieties of corn.
